Ingredients

Base

  • ¼ cup coconut oil (melted)
  • ¼ cup cane sugar
  • 1 large egg
  • ½ cup all-purpose flour
  • ½ cup oat flour
  • ¼ teaspoon cinnamon
  • ¼ teaspoon salt

Filling

  • 1 pound strawberries (small diced)
  • 2 tablespoons cane sugar
  • 1 tablespoon lemon juice

Crumble Topping

  • ¼ cup oat flour
  • ¼ cup all-purpose flour
  • ¼ cup coconut oil (melted)
  • ¼ cup cane sugar
  • ¼ teaspoon salt
  • 1 ½ cup rolled oats

Instructions

  1. Make base: Preheat the oven to 350°F and line an 8” x 8” baking pan with parchment paper. In a large bowl, combine the melted coconut oil, cane sugar, and egg using a stand mixer or handheld beaters on medium-high speed until well blended. Add the all-purpose flour, oat flour, cinnamon, and salt; mix on low speed until just incorporated. Press the dough evenly into the prepared pan, then chill in the refrigerator for at least 20 minutes while preparing the other layers.
  2. Prepare filling: In a separate bowl, toss the diced strawberries with cane sugar and lemon juice to coat evenly. Set aside to allow the sugar to draw out the juices, enhancing flavor.
  3. Make crumble topping: In another large bowl, mix together the oat flour, all-purpose flour, melted coconut oil, cane sugar, and salt. Add the rolled oats and use your fingers to combine everything until the mixture becomes crumbly with even oat distribution.
  4. Assemble bars: Remove the chilled base from the refrigerator. Spread the prepared strawberry filling evenly over the base layer. Then sprinkle the crumble topping evenly over the strawberries without pressing it down to maintain a light, crisp texture.
  5. Bake: Place the assembled pan in the preheated oven and bake for 45 to 50 minutes until the topping is golden and the strawberry filling is bubbling gently around the edges.
  6. Cool and serve: Let the bars cool in the pan for at least 20 minutes to set. Once cooled completely, lift them out using the parchment paper and slice into 9 equal squares. Serve and enjoy!

Notes

  • Using parchment paper for lining the pan ensures easy removal and clean edges.
  • For softer bars, bake closer to 45 minutes; for crunchier topping, bake up to 50 minutes.
  • Ensure strawberries are diced small for even cooking and distribution in the filling.
  • These bars can be stored in an airtight container at room temperature for up to 3 days or refrigerated for up to a week.
  • Oat flour can be made by grinding rolled oats in a blender if not available.
