Ingredients

Carrots and Seasonings

  • 1 Pound Carrots
  • 3 Tablespoons Olive Oil
  • 2 Tablespoons Honey
  • 1/2 Teaspoon Aleppo Pepper
  • 1 Teaspoon Cumin
  • 1/2 Teaspoon Paprika
  • 1/2 Teaspoon Cinnamon
  • Sea Salt (to taste)
  • Ground Black Pepper (to taste)

Whipped Feta

  • 8 Ounces Feta Cheese (crumbled)
  • 1 Cup Greek Yogurt
  • 1 Lemon (juiced - about 3 tablespoons lemon juice)
  • 3 Tablespoons Olive Oil
  • 2 Cloves Garlic

Garnish (Optional)

  • 1 Tablespoon Fresh Parsley (chopped)
  • 1/2 Teaspoon Aleppo Pepper
  • 1 Drizzle Olive Oil
  • 1 Tablespoon Pomegranate Arils

Instructions

  1. Preheat Oven: Preheat your oven to 400°F (200°C) to prepare for roasting the carrots.
  2. Season Carrots: Wash and optionally cut the carrots, removing any stems. Place them in a large bowl and add olive oil, honey, Aleppo pepper, cumin, paprika, cinnamon, sea salt, and black pepper. Toss the carrots with your hands to coat them evenly with the seasoning mixture.
  3. Line Baking Sheet: Line a baking sheet with parchment paper to prevent sticking, then spread the seasoned carrots out evenly on the sheet.
  4. Roast Carrots: Roast the carrots in the preheated oven for 20-25 minutes until fork tender. Halfway through cooking, remove the tray and toss the carrots to ensure even roasting.
  5. Prepare Whipped Feta: While the carrots roast, add crumbled feta, Greek yogurt, lemon juice, olive oil, and garlic to a food processor. Blend until smooth and creamy. Add water a tablespoon at a time if you prefer a thinner consistency, reprocessing until desired texture is achieved.
  6. Assemble Carrots and Feta: Spread the whipped feta evenly on a serving plate. Remove the roasted carrots from the oven and arrange them on top of the whipped feta layer.
  7. Garnish Carrots: Garnish with chopped fresh parsley, a drizzle of olive oil, extra Aleppo pepper, or pomegranate arils as desired. Serve immediately and enjoy!
  8. Storage Instructions: To prepare ahead, store the roasted carrots and whipped feta separately in airtight containers in the refrigerator.
  9. Reheat Carrots: When ready to serve, reheat carrots on a parchment-lined baking sheet at 250°F for 10-15 minutes. Then plate with whipped feta and garnish as described.

Notes

  • You can cut the carrots into sticks or leave them whole as preferred before roasting.
  • Adjust the level of Aleppo pepper and other spices to suit your heat tolerance.
  • For a thinner whipped feta sauce, add water slowly to reach the preferred consistency.
  • The recipe is best served fresh after roasting but can be stored and reheated as explained.
  • Optional garnishes like pomegranate arils add a lovely pop of color and slight tartness.
