Ingredients

Meat and Vegetables

  • 1 (12 ounce) package chicken sausage, sliced in ½-inch rounds
  • 1 ½ cups sliced zucchini
  • 1 cup grape tomatoes, halved
  • ½ cup diced red onion

Other Ingredients

  • 1 tablespoon olive oil
  • 12 large eggs
  • 1 cup milk
  • ¾ teaspoon kosher salt
  • ½ teaspoon ground black pepper
  • ¼ cup crumbled feta cheese
  • 1 tablespoon chopped fresh dill

Instructions

  1. Preheat and prepare ingredients: Gather all ingredients. Preheat your oven to 400°F (200°C).
  2. Roast sausage and vegetables: Place the chicken sausage slices, zucchini, grape tomatoes, and diced red onion on a rimmed baking sheet. Drizzle with olive oil and toss evenly. Spread the mixture into a single layer on the sheet.
  3. Initial roasting: Roast in the preheated oven for about 7 minutes, until the edges are browned.
  4. Reduce oven temperature: Remove the baking sheet from the oven and lower the heat to 375°F (190°C).
  5. Mix eggs and seasonings: In a bowl, whisk together the eggs, milk, kosher salt, and ground black pepper until fully combined.
  6. Pour egg mixture and add feta: Evenly pour the egg mixture over the roasted sausage and vegetables on the sheet pan. Sprinkle the crumbled feta cheese evenly on top.
  7. Bake the frittata: Return the sheet pan to the oven and bake until the eggs are set, about 17 to 20 minutes.
  8. Add fresh herbs and serve: Once baked, sprinkle the frittata with chopped fresh dill and serve warm, ideally with buttered toast.

Notes

  • This recipe is very customizable and is a great way to use leftover vegetables.
  • The chicken sausage used is roasted garlic flavored with onion and herbs, but you can choose any preferred variety.
  • Serving with buttered toast complements the hearty frittata nicely.
  • You can substitute the milk with a lactose-free or plant-based alternative for dietary needs.
