Ingredients

Beef and Seasonings

  • 2 ½ Pounds Beef Brisket, cut into 2-3 pieces
  • 1 Teaspoon Kosher Salt
  • 1 Teaspoon Ground Black Pepper

Cooking and Sauce Ingredients

  • 2 Tablespoons Avocado Oil
  • 3 Carrots, peeled and diced
  • 1 Small Yellow Onion, diced
  • 6 Cloves Garlic, sliced
  • 1 Tablespoon Smoked Paprika
  • 2 Teaspoons Dried Thyme
  • 2 Tablespoons Tomato Paste
  • 1 Tablespoon Worcestershire Sauce
  • 2 ½ Cups Beef Broth
  • 1 Lime, juiced (approximately 3 tablespoons)
  • 1 Bunch Chives, finely chopped (for garnish)

Instructions

  1. Season the Brisket: Generously rub the brisket pieces with kosher salt and ground black pepper, ensuring all sides are well coated. Set aside to allow the seasoning to penetrate the meat.
  2. Sear the Brisket: Heat avocado oil in a large pot over high heat until very hot. Add the brisket pieces fat side down, and sear undisturbed for 5–6 minutes. Flip and sear the other side for 5 minutes. Remove the brisket from the pot and set aside.
  3. Sauté Vegetables and Spices: Lower heat to medium, then add diced carrots, onion, and sliced garlic to the pot. Sauté for about 4 minutes, stirring occasionally, until vegetables soften and become fragrant. Stir in smoked paprika, dried thyme, additional salt and pepper, tomato paste, Worcestershire sauce, and beef broth. Let the mixture cook for 3–4 minutes to meld flavors.
  4. Transfer to Instant Pot: Carefully pour the vegetable and broth mixture into the Instant Pot. Nestle the seared brisket pieces into the liquid. Squeeze the lime juice evenly over the top. Secure the lid and set the Instant Pot to high pressure for 1 hour and 40 minutes.
  5. Release Pressure and Shred: After cooking, perform a quick release to safely open the Instant Pot. Remove the brisket and shred it to your desired consistency using forks or tongs.
  6. Blend the Sauce: Use an immersion blender or transfer the remaining cooking liquid and vegetables into a regular blender and blend until smooth, creating a silky sauce.
  7. Serve: Plate the shredded brisket, pour the blended sauce over the top, garnish with finely chopped chives, and enjoy this flavorful meal.

Notes

  • Be sure to sear the brisket well for maximum flavor before pressure cooking.
  • Adjust seasoning toward the end if needed, as pressure cooking can mute some flavors.
  • The lime juice adds a bright, fresh contrast to the rich sauce—do not skip it.
  • Use an immersion blender to blend the sauce directly in the Instant Pot for easy cleanup.
  • Leftovers can be refrigerated for up to 3 days and reheat well.
