This saucy Asian-inspired chuck roast is a tender, flavorful dish featuring a rich marinade of soy sauce, hoisin, honey, and spices, slow-cooked in the oven until perfectly shreddable. Finished under the broiler for caramelized, crispy edges, it’s ideal served over rice with green onions, sesame seeds, and a touch of chili crisp for heat.

Ingredients

Beef

  • 3 ½ - 4 Pounds Chuck Roast

Marinade & Sauce

  • 1 Cup Low Sodium Soy Sauce
  • ¼ Cup Honey
  • ½ Cup Hoisin Sauce
  • ⅓ Cup Rice Vinegar
  • 1 Cup Beef Broth
  • 3 Tablespoons Coconut Sugar (or brown sugar)
  • 5 Cloves Garlic (mashed)
  • 2 Tablespoons Sesame Oil
  • 2 Teaspoons Red Chili Pepper Flakes (adjust less if desired)
  • 1 Teaspoon Kosher Salt

Garnishes

  • Sesame Seeds
  • Green Onions (thinly sliced)
  • Chili Crisp (optional, for extra heat)

Instructions

  1. Preheat Oven: Start by preheating your oven to 325°F to prepare for the slow cooking process.
  2. Prepare Sauce: In a medium bowl, whisk together the soy sauce, honey, hoisin sauce, rice vinegar, beef broth, coconut sugar or brown sugar, mashed garlic, sesame oil, red chili flakes, and kosher salt until smooth and fully combined to create the flavorful marinade.
  3. Coat the Roast: Pat the chuck roast dry with paper towels. Place it in a Dutch oven or an oven-safe pot with a tight-fitting lid. Pour the marinade over the roast, then flip it a few times to ensure it’s completely coated on all sides.
  4. Slow Cook: Cover the pot with the lid and place it in the preheated oven. Cook for about 3½ hours. After this time, check the roast with two forks; it should shred easily. If it’s still firm or resists shredding, recover and continue to cook for another 30 minutes or as needed until tender.
  5. Shred the Meat: Remove the pot from the oven once the roast is tender. Using two forks, shred the beef directly in the pot and toss it thoroughly in the juices to coat the meat.
  6. Broil for Crispy Edges: For crispy, caramelized bits, place the pot under the broiler on high for 3–4 minutes. Watch carefully to avoid burning.
  7. Serve: Spoon the saucy shredded beef over cooked rice. Garnish with sliced green onions, sesame seeds, and a drizzle of chili crisp if you want extra heat.

Notes

  • You can substitute coconut sugar with brown sugar if preferred.
  • Adjust red chili pepper flakes according to your spice tolerance.
  • Use a Dutch oven or any oven-safe pot with a tight-fitting lid to keep the moisture in while cooking.
  • Broil the shredded roast carefully and not too long to prevent burning the edges.
  • This recipe pairs wonderfully with steamed rice or noodles.
