Ingredients

Salmon Cakes

  • 4-5 potatoes (about 3 cups mashed potatoes)
  • 450g (2 cups) canned or fresh cooked salmon, skin and bones removed
  • 1 egg
  • 1 lemon, juice and zest
  • 1 tbsp flour, plus extra for dusting
  • 2 tbsp parsley or dill, chopped
  • Salt and pepper, to taste
  • 2 tbsp olive oil (for frying)

Chive and Garlic Yogurt Sauce

  • 125ml (1/2 cup) Greek yogurt
  • 1 tbsp chives, chopped
  • 1 clove garlic, pressed
  • 1 tsp lemon juice
  • Salt and pepper, to taste

Instructions

  1. Combine Ingredients: In a large mixing bowl, mix the mashed potatoes and salmon ensuring no skin or bones remain. Add the egg, lemon zest, lemon juice, chopped parsley or dill, and 1 tablespoon of flour. Season with salt and pepper and mix thoroughly until well combined.
  2. Form Patties: Using an ice cream scoop, portion out the mixture into even-sized cakes. Roll each in flour on a dusted surface and gently flatten them to form patties.
  3. Pan Fry the Salmon Cakes: Heat olive oil in a skillet over medium heat. Fry the salmon cakes until golden brown and crispy on both sides, about 3-4 minutes per side.
  4. Air Fryer Option: Preheat your air fryer to 240°C (500°F). Spray the salmon cakes lightly with olive oil spray and arrange them in the air fryer basket without overcrowding. Cook for 8-9 minutes until golden and crisp, flipping halfway through if necessary. Cook in batches if required due to air fryer size.
  5. Make the Yogurt Sauce: In a small bowl, combine Greek yogurt, lemon juice, chopped chives, and pressed garlic. Season with salt and pepper. Let the sauce sit for at least 15 minutes to allow the flavors to meld.
  6. Serve: Serve the crispy salmon cakes hot with a side of the chilled chive and garlic yogurt sauce.

Notes

  • You can substitute fresh cooked salmon with canned salmon for convenience.
  • Adjust the quantity of lemon zest and juice according to your taste preference for brightness.
  • For a gluten-free version, substitute the flour with a gluten-free alternative.
  • Air frying provides a healthier alternative to pan frying with less oil.
  • Letting the yogurt sauce sit enhances its flavor and balance.
  • Ensure to remove all bones from the salmon for the best texture and eating experience.
