Ingredients

Dates

  • 20 Medjool dates (pitted)

Peanut Butter Layer

  • ⅓ cup creamy peanut butter (or nut butter of your choice)

Chocolate Topping

  • ¾ cup dairy-free chocolate chips
  • 1 teaspoon coconut oil

Optional

  • ½ teaspoon flaked sea salt

Instructions

  1. Prepare Dates: Slice each Medjool date down the side with a paring knife. Remove the pit and open the date up, then press it down with your hand to flatten it slightly.
  2. Arrange Dates: Place the flattened dates on a parchment paper-lined baking sheet in a rectangular shape, arranging them in 4 across and 5 down.
  3. Melt Peanut Butter: In a small microwave-safe bowl, melt the peanut butter in 20-second intervals, stirring between each, until smooth and pourable. Drizzle the melted peanut butter evenly over the arranged dates and spread it as needed with a silicone spatula.
  4. Melt Chocolate: In a medium microwave-safe bowl, combine the dairy-free chocolate chips and coconut oil. Heat in 30-second intervals, stirring well after each, until the mixture is fully melted and smooth.
  5. Apply Chocolate Layer: Spoon and spread the melted chocolate over the peanut butter layer, covering it edge to edge.
  6. Add Salt (Optional): Sprinkle the flaked sea salt evenly over the top of the chocolate layer if using.
  7. Chill and Set: Refrigerate the bark for 1 hour or until the chocolate is fully set and firm.
  8. Serve: Use a sharp knife to cut the bark into bite-size pieces and enjoy.

Notes

  • Use any nut butter you prefer as a substitute for peanut butter, such as almond or cashew butter.
  • If you do not have a microwave, you can melt the peanut butter and chocolate gently using a double boiler on the stovetop.
  • For extra texture, you can sprinkle chopped nuts or seeds on top before chilling.
  • Store the bark in an airtight container in the refrigerator for up to one week.
  • This recipe is naturally dairy-free and vegan if using vegan chocolate chips.
