Ingredients

Salmon

  • 4 salmon fillets (6 ounces each)
  • 2 tablespoons olive oil

Sauce

  • 3 cloves garlic, minced
  • 1/4 cup sun-dried tomatoes
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 2 tablespoons lemon juice
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Preheat Your Equipment: Heat a large skillet over medium-high heat to prepare for cooking the salmon and sauce.
  2. Combine Ingredients: In a small bowl, mix together the lemon juice, chicken broth, and heavy cream. Set this mixture aside for later.
  3. Cook the Salmon: Add olive oil to the hot skillet. Once it’s hot, place the salmon fillets in the skillet and cook for 4-5 minutes per side until golden brown and cooked through. Remove the salmon from the skillet and set aside.
  4. Sauté Aromatics: In the same skillet, add the minced garlic and sun-dried tomatoes. Sauté for about 1 minute until fragrant to release their flavors.
  5. Make the Sauce: Pour the cream mixture into the skillet and bring to a gentle simmer. Let the sauce reduce for 3-4 minutes, thickening slightly and concentrating the flavors.
  6. Finish Cooking: Return the salmon fillets to the skillet, spoon the sauce over them, and cook for an additional 2 minutes to heat through and coat the fish with the creamy sauce.
  7. Serve: Garnish with fresh chopped parsley and serve immediately with your choice of vegetables, rice, or pasta for a complete meal.

Notes

  • Sun-dried tomatoes packed in oil will add extra flavor, but drain before using if desired.
  • You can substitute chicken broth with vegetable broth for a lighter taste.
  • Cooking times may vary depending on the thickness of the salmon fillets.
  • Use fresh parsley for garnish to add a bright, herbal note.
  • This dish pairs beautifully with steamed vegetables, a light salad, or buttery pasta.
