Ingredients
Vegetables
2 garlic cloves, minced
1/2 onion, diced
2 cups packed chopped kale leaves
2 cups cooked and cubed butternut squash
Egg Mixture
10 large eggs
1/2 cup yogurt (or dairy-free yogurt/coconut milk)
Salt and pepper, to taste
Other
3 tablespoons olive oil
4 ounces goat cheese
Instructions
Prepare the base: Heat the olive oil in a 10-inch cast iron skillet over medium heat. Add the minced garlic and diced onion, sautéing for one minute until fragrant and translucent.
Sauté the kale: Add the chopped kale to the skillet, reduce the heat to medium-low, and cook for 3-4 minutes until the kale is soft and wilted.
Mix eggs and yogurt: While the kale is cooking, whisk together the eggs and yogurt in a large mixing bowl until creamy. Season the mixture with salt and pepper to taste.
Add butternut squash: Lower the heat to low. Stir in the cooked, cubed butternut squash with the kale and onions in the skillet to combine evenly.
Pour and cook: Pour the egg and yogurt mixture over the vegetable mixture in the skillet, then sprinkle the goat cheese evenly on top. Cook on the stovetop for 8-10 minutes until the edges begin to set.
Broil to finish: Turn on the oven broiler and place the skillet on a middle rack. Broil for 8-10 minutes, checking frequently to prevent over-browning. Adjust the oven rack if the top browns too quickly.
Serve: Remove the frittata from the oven, let it cool slightly, slice, and serve warm.
Notes
You can substitute goat cheese with feta or mozzarella if preferred.
Use dairy-free yogurt or coconut milk to make this recipe vegan-friendly.
Ensure butternut squash is fully cooked before adding to the frittata to maintain tenderness.
Cooking times may vary depending on your broiler's strength; monitor closely during broiling.
Leftovers can be refrigerated for up to 3 days and reheated gently.
