Ingredients

Tea Base

  • 6 cups water
  • 12 black tea bags

Spices and Flavorings

  • 1 cinnamon stick
  • 1 thumb-sized piece of fresh ginger, thinly sliced
  • 1 tablespoon orange zest (from 1 orange)
  • 10 whole cardamom pods or 60 cardamom seeds
  • 3 whole star anise
  • 20 whole cloves
  • 20 whole black peppercorns
  • 1 tablespoon freshly ground nutmeg
  • 2 tablespoons vanilla extract

Sweetener

  • 1 cup brown sugar
  • To Serve

    • 6 cups milk (whole, almond, or coconut milk recommended)

Instructions

  1. Boil water: In a large pot, bring 6 cups of water to a rolling boil over high heat.
  2. Add tea and spices: Add the 12 black tea bags, cinnamon stick, sliced ginger, orange zest, cardamom pods (or seeds), star anise, cloves, black peppercorns, freshly ground nutmeg, vanilla extract, and brown sugar to the boiling water. Stir well to combine all ingredients.
  3. Steep the tea: Remove the pot from heat and let the mixture steep for 15-20 minutes, or longer if you prefer a stronger tea flavor.
  4. Strain the concentrate: Using a fine mesh strainer or nut bag, strain the tea concentrate into a large, airtight glass jar or container to remove all tea bags and spices.
  5. Serve the chai: To enjoy, combine ½ cup of chai concentrate with ½ cup of your preferred milk. Warm this mixture in a small saucepan over medium-low heat on the stovetop or heat in a microwave-safe cup on high power until warm.
  6. Store the concentrate: Keep any remaining chai concentrate in a sealed container in the refrigerator, where it will stay fresh for up to 2 weeks.

Notes

  • You can adjust the sweetness by adding more or less brown sugar according to taste.
  • For a vegan option, use almond or coconut milk instead of dairy milk.
  • Steeping time can be extended for a stronger, more robust chai flavor.
  • Ensure to strain thoroughly to avoid any spice or tea bag residue in the concentrate.
  • The concentrate can be served hot or iced by mixing with cold milk and ice cubes.
