Ingredients

Egg Salad

  • 8 Hard Boiled Eggs
  • 2 Ripe Avocados (mashed)
  • 3/4 Cup Parsley (finely chopped)
  • 1/3 Cup Dill (chopped)
  • 1/2 Red Onion (finely diced)
  • 1 Lemon (zested and juiced)
  • 3/4 Teaspoon Cumin
  • 1 Teaspoon Kosher Salt
  • 1/2 Teaspoon Ground Black Pepper
  • Olive Oil (a drizzle, as needed)

Egg Baking Hack

  • Oil (for greasing loaf pan)
  • 8 Whole Eggs (for baking method)

Instructions

  1. Prepare Hard Boiled Eggs: Start by cooking your eggs using your preferred method. For a convenient hack, preheat your oven to 350°F, grease a loaf pan lightly with oil, crack eggs into the pan, then place the loaf pan inside a larger baking dish filled with water halfway up the sides of the loaf pan. Bake for 30 minutes.
  2. Cool Eggs: After boiling or baking, remove the eggs from heat and let them cool completely. If using the baking method, once cool, flip the loaf pan over and chop the eggs finely.
  3. Mash Avocado: Place the ripe avocados on a flat plate and mash thoroughly with a fork until smooth and creamy. This method is easier than mashing in a bowl and ensures even texture.
  4. Combine Ingredients: Transfer the mashed avocado into a large bowl. Add the chopped eggs, finely chopped parsley, dill, red onion, lemon zest, and lemon juice to the bowl. Season with cumin, kosher salt, ground black pepper, and add a drizzle of olive oil. Mix all ingredients together well using a spoon until fully combined.
  5. Serve and Store: Serve the herby avocado egg salad immediately for best flavor. Store any leftovers in an airtight container in the refrigerator for up to one week.

Notes

  • For easier peeling, place boiled eggs in an ice bath immediately after cooking.
  • The avocado prevents the salad from drying out, so fresh ripe avocados are important for best creaminess.
  • You can adjust the amount of herbs and spices according to your taste preferences.
  • This egg salad works great as a sandwich filling, on crackers, or as a salad topping.
  • Use freshly ground black pepper for the best flavor.
  • Leftovers should be kept refrigerated and consumed within a week for optimal freshness and safety.
