Ingredients

Crust

  • 25 mint Oreo cookies, finely crushed
  • 4 Tablespoons salted butter (½ stick), melted

Filling

  • 8 ounces cream cheese, softened
  • 13 ounces marshmallow fluff
  • 3 Tablespoons green creme de menthe
  • 2 Tablespoons creme de cacao
  • green food coloring (optional)
  • 1 ½ cups heavy whipping cream, very cold

Garnish

  • Oreo cookies
  • chocolate syrup
  • whipped cream

Instructions

  1. Prepare the Crust: In a food processor or blender, pulse the mint Oreo cookies with the melted butter until the mixture reaches a fine, crumbly texture. Press this crumb mixture firmly into the bottom and up the sides of a 9-inch deep dish pie plate. Chill the crust in the freezer or refrigerator for 15 minutes to set.
  2. Make the Filling: In a large bowl, beat together the softened cream cheese, marshmallow fluff, creme de menthe, and creme de cacao until the mixture is smooth. Add green food coloring if desired, adjusting to achieve your preferred shade of green.
  3. Whip the Cream: In a separate chilled bowl, whip the very cold heavy cream until stiff peaks form. Gently fold the whipped cream into the prepared marshmallow mixture using a silicone spatula, blending until fully incorporated and light.
  4. Assemble the Pie: Pour the filling evenly into the chilled Oreo crust, smoothing the surface with a spatula to create an even layer.
  5. Freeze the Grasshopper Pie: Place the assembled pie in the freezer for at least 6 hours, or preferably overnight, to allow it to firm up properly.
  6. Garnish and Serve: Just before slicing and serving, garnish the pie with additional Oreo cookies, whipped cream, and a drizzle of chocolate syrup for extra flavor and presentation.

Notes

  • Be sure to chill your heavy cream and mixing bowl before whipping to help achieve stiff peaks.
  • Use a silicone spatula to gently fold the whipped cream into the filling to maintain the airy texture.
  • If green food coloring is not desired, the filling will still have a minty color from the creme de menthe.
  • For best flavor, allow the pie to freeze overnight before serving.
  • Store leftover pie covered in the freezer and consume within 3-4 days.
