Ingredients

Dry Ingredients

  • 3 cups all purpose flour
  • 2 teaspoons baking powder
  • 1 1/2 teaspoons kosher salt

Wet Ingredients

  • 5 tablespoons salted butter, at room temperature (or coconut oil)
  • 1 cup hot water
  • Olive oil, for cooking (small drizzle per tortilla)

Instructions

  1. Mix Dry Ingredients: In a large bowl, combine the flour, baking powder, and kosher salt thoroughly to ensure even distribution.
  2. Add Butter and Hot Water: Add the softened butter to the dry ingredients, then pour in the hot water. Stir with a spoon until a shaggy dough forms.
  3. Knead the Dough: Turn the dough onto a floured surface and knead by hand for 1 to 2 minutes, until it forms a smooth, elastic ball. Cover the bowl with a damp towel and let the dough rest for 10 minutes to hydrate and relax gluten.
  4. Portion and Roll Out: Divide the rested dough into 12 to 14 equal pieces and shape each into a rough ball. Using a rolling pin or a tortilla press, roll each ball out into an 8-inch diameter thin circle.
  5. Cook the Tortillas: Heat a skillet over medium-high heat and drizzle a small amount of olive oil to lightly coat the surface. Place one tortilla in the skillet and cook for 30 to 60 seconds until bubbles start to form on the surface. Flip and cook for another 30 seconds or until the bottom has slight golden spots.
  6. Keep Warm and Repeat: Remove the cooked tortilla and place it on a plate, cover with a clean towel to keep warm. Repeat the cooking process with the remaining tortillas, adding olive oil as needed.
  7. Serve or Store: Serve the tortillas warm immediately or store them in an airtight container for up to 3 days for later use.

Notes

  • Use hot water to help make the dough easier to work with and result in tender tortillas.
  • Resting the dough is essential to keep tortillas soft and pliable.
  • Adjust flour quantity as needed during kneading for a smooth but not sticky dough.
  • Cooking times vary based on skillet heat; watch closely to avoid burning.
  • Store leftover tortillas in an airtight container at room temperature or refrigerate for up to 3 days.
  • For dairy-free, substitute butter with coconut oil or another plant-based fat.
