Ingredients

Simple Syrup

  • 3/4 cup erythritol
  • 1 cup water

Fruit Puree & Juice

  • 2 cups fresh dragon fruit (flesh scooped out)
  • 1 cup frozen red dragon fruit
  • 1 cup fresh lemon juice (about 6-8 lemons)

Beverage

  • 8 cups cold water
  • Ice cubes, as needed
  • Lemon slices and extra dragon fruit for garnish

Instructions

  1. Prepare Dragon Fruit Puree: Scoop the flesh from the fresh dragon fruit and place it in a blender with the frozen red dragon fruit. Blend until smooth to create a vibrant pink puree that will give the lemonade its distinctive color.
  2. Juice the Lemons: Squeeze fresh lemons to obtain 1 cup of lemon juice. Set aside.
  3. Make the Simple Syrup: In a small saucepan, combine 3/4 cup erythritol and 1 cup water. Bring to a boil over medium heat, stirring occasionally, until the erythritol is completely dissolved. Remove from heat and allow the syrup to cool to room temperature.
  4. Combine Ingredients: In a large pitcher, mix the dragon fruit puree, freshly squeezed lemon juice, cooled erythritol simple syrup, and 8 cups of cold water. Stir gently to combine all the flavors and ensure the mixture turns a striking pink color.
  5. Chill and Serve: Add ice cubes to the pitcher and stir once more to chill the lemonade. Serve the drink in glasses, garnished with lemon slices and extra pieces of dragon fruit for an eye-catching presentation.

Notes

  • You can adjust the sweetness by modifying the amount of erythritol in the simple syrup according to your preference.
  • For an extra cold drink, chill the lemonade in the refrigerator before adding ice and serving.
  • The frozen dragon fruit helps keep the drink cold while adding more intense flavor and color.
  • If fresh dragon fruit is unavailable, substitute entirely with frozen dragon fruit or other similar fruits like pitaya.
  • To make the drink more fizzy, you can substitute some of the water with sparkling water just before serving.
