Ingredients

Mushrooms

  • 420 g / 20 mushrooms (wiped clean, any scrappy ends of the stem removed)

Breading

  • 75 g / 1 cup plain/all-purpose flour
  • 2 large eggs
  • 100 g / 1 ¼ cup fine dried breadcrumbs
  • ½ tsp garlic powder
  • ½ tsp dried parsley
  • ½ tsp fine sea salt (+ more for serving)
  • ¼ tsp cracked black pepper
  • Oil for frying

Garlic and Chive Dip

  • 1 cup mayonnaise
  • 1 clove garlic (minced)
  • ½ tbsp finely chopped chives (+ more for serving, optional)

Instructions

  1. Make the garlic and chive dip: Add the mayonnaise to a bowl and stir in the minced garlic and finely chopped chives. Cover and refrigerate the dip until ready to serve to allow the flavors to meld.
  2. Prepare the mushrooms: Clean the mushrooms thoroughly with a vegetable brush or kitchen paper; avoid washing them with water to prevent sogginess. Remove any scrappy ends of the stems.
  3. Preheat the deep fryer: Turn on the deep fat fryer and set it to high heat, ensuring the oil reaches the correct temperature for deep frying.
  4. Prepare the breading stations: Place the flour in one small bowl. Whisk the eggs together in a second bowl. In a third bowl, combine the fine dried breadcrumbs with garlic powder, dried parsley, sea salt, and cracked black pepper, mixing thoroughly with a fork.
  5. Bread the mushrooms: Dip each mushroom first in the flour, shaking off excess, then dip into the whisked eggs, and finally coat thoroughly with the seasoned breadcrumb mixture. Place each breaded mushroom on a plate and repeat with all mushrooms.
  6. Deep fry the mushrooms: Once the oil is hot, place 5 mushrooms into the fryer basket and lower it into the oil. Fry for approximately 3 minutes or until the mushrooms turn golden brown and crispy.
  7. Drain and cool: Carefully remove the fried mushrooms from the oil and transfer to a plate lined with kitchen paper to absorb excess oil. Repeat the frying process with all remaining mushrooms.
  8. Serve: Allow the mushrooms to cool slightly before serving them hot alongside the garlic and chive mayonnaise dip. Optionally sprinkle additional sea salt and chopped chives on top for extra flavor.

Notes

  • Do not wash mushrooms with water; cleaning with a brush or paper keeps them from becoming soggy.
  • Ensure the oil is hot enough before frying for a crispy texture; too low heat results in greasy mushrooms.
  • You can use any variety of mushrooms, but button mushrooms work best for this recipe.
  • Adjust seasoning in the breadcrumb mix to taste if desired.
  • For a healthier version, consider air frying the breaded mushrooms instead of deep frying.
