Ingredients

Base Recipe:

  • 8 large eggs
  • 1 cup 2% cottage cheese (do not use fat free)
  • 2 tablespoons water, plus more for the water bath
  • 1 teaspoon kosher salt
  • Lots of freshly ground black pepper

Flavor Options:

  • Spinach, Feta & Sundried Tomato: 1 cup baby spinach, finely chopped; ½ cup sundried tomatoes, drained and finely chopped; ½ cup crumbled feta cheese
  • Breakfast Sausage & Cheddar: 3.5 oz. frozen maple apple chicken breakfast sausage (thawed and chopped into ¼-inch pieces); ⅔ cup shredded sharp cheddar cheese
  • Bacon & Gruyere: 6 slices bacon, baked until crispy and chopped into bits; ⅔ cup shredded gruyere cheese
  • The Denver Omelette: 3 slices ham, chopped into small bits; ½ green bell pepper, finely chopped; ¼ sweet onion, finely chopped; ⅔ cup shredded cheddar cheese
  • Caprese: 2 roma tomatoes, finely chopped; 4 tablespoons basil pesto; ⅔ cup shredded low-moisture mozzarella cheese (or 2 to 3 ounce goat cheese crumbles)

Instructions

  1. Preheat Oven: Preheat the oven to 350ºF. Place a silicone muffin pan with 12 cups onto a rimmed baking sheet and spray the muffin cups generously with cooking spray to prevent sticking.
  2. Blend Base Mixture: In a large high-powered blender, combine the eggs, 2% cottage cheese, 2 tablespoons water, kosher salt, and freshly ground black pepper. Blend for about 15 seconds until smooth and the cottage cheese is fully incorporated. To remove air bubbles, gently tap the blender pitcher on the counter a few times.
  3. Fill Muffin Cups: Pour the egg mixture evenly into each muffin cup, filling about ¾ of the way full to allow room for rise during cooking.
  4. Add Flavor Variations: Choose your desired flavor variation and evenly divide the ingredients among the 12 cups. Use a spoon to gently stir mix-ins into the egg base and then top each cup with the specified cheese or toppings listed for each flavor:
    • Spinach, Feta & Sundried Tomato: stir in spinach and sundried tomatoes, top with crumbled feta.
    • Breakfast Sausage & Cheddar: stir in chopped sausage, top with shredded cheddar.
    • Bacon & Gruyere: stir in chopped bacon, top with shredded gruyere.
    • The Denver Omelette: stir in ham, bell pepper, and onion, top with shredded cheddar.
    • Caprese: stir in chopped tomato and pesto, top with shredded mozzarella.
  5. Bake with Water Bath: Carefully transfer the baking sheet with muffin pan to the oven. Pour about 2 cups of water onto the rimmed baking sheet surrounding the muffin pan to create a water bath, which helps the egg bites cook evenly and remain fluffy.
  6. Bake: Bake for 35 to 40 minutes, until the egg bites are set and no longer jiggle when the top is gently pressed with a finger.
  7. Cool and Remove: Remove the baking sheet from the oven and let the egg bites cool in the pan for about 10 minutes before removing them for serving or storage.

Notes

  • Storage: Store leftover egg bites in an airtight container in the refrigerator for up to 5 days or freeze for up to 1 month.
  • Reheating: Microwave refrigerated bites for 30-45 seconds before eating. For frozen bites, defrost in the microwave until thawed, then heat for 45 seconds to 1 minute until warmed through.
  • Do not use fat-free cottage cheese as it affects texture and creaminess.
  • Use a silicone muffin pan for easy removal of egg bites.
  • Add water to the baking sheet during baking to ensure even cooking and maintain fluffiness.
