Ingredients

Main Ingredients

  • 2 tsp Sunflower oil
  • 500 g Beef mince (5% fat)
  • 1 Onion, peeled and chopped
  • 2 Garlic cloves, peeled and crushed
  • 2 Green peppers, sliced
  • 750 ml Hot beef stock
  • 6 tbsp Ketchup
  • 3 tbsp Mustard (Yellow/American kind)
  • 3 tsp Paprika
  • 3 tbsp Worcestershire sauce
  • 250 g Dried pasta
  • 50 g Pickles (gherkin), chopped
  • 100 g Cream cheese
  • 75 g Red Leicester cheese, grated
  • Salt and freshly ground black pepper, to taste

Instructions

  1. Brown the beef mince: Heat sunflower oil in a large saucepan or sauté pan over high heat. Add the beef mince and cook for 5-10 minutes, stirring occasionally, until browned evenly all over.
  2. Sauté vegetables: Add chopped onion, crushed garlic, and sliced green peppers to the pan. Cook for an additional 5 minutes until vegetables are softened.
  3. Add liquids and seasonings: Stir in 500 ml of the hot beef stock, ketchup, mustard, paprika, Worcestershire sauce, salt, and a generous amount of freshly ground black pepper. Mix well to combine.
  4. Cook the pasta: Add the dried pasta to the pan and bring the mixture to a simmer. Place a lid on the pan and cook for 15-20 minutes, stirring occasionally, until the pasta is al dente and the sauce has thickened.
  5. Preheat the grill: While the pasta cooks, preheat your grill to high temperature to prepare for melting cheese.
  6. Finish the sauce: Once the pasta is cooked, turn off the heat. Stir in the chopped pickles and cream cheese until evenly combined and creamy.
  7. Grill with cheese: Sprinkle the grated Red Leicester cheese over the pasta. Place the pan under the preheated grill for 3-5 minutes or until the cheese is melted and bubbling.

Notes

  • Ensure to use plenty of black pepper to balance the ketchup and mustard flavors.
  • Monitor the pasta cooking closely to avoid overcooking; it should remain al dente with a thickened sauce.
  • If you prefer, substitute Red Leicester with cheddar cheese for a sharper flavor.
  • This dish can be adapted with different pasta shapes but it works best with dried pasta that cooks evenly in liquid.
