Ingredients

Pastry

  • 1 sheet puff pastry (thawed)

Cream Cheese Mixture

  • 8 oz cream cheese
  • 2 tsp lemon zest
  • 1 tsp lemon juice
  • 1 tsp vanilla extract
  • 1 egg yolk
  • 2 tbsp honey

Fruit Topping

  • 1 pint blueberries

Egg Wash

  • 1 egg
  • 1 tbsp water

Finishing Touch

  • 2 tbsp icing sugar

Instructions

  1. Preheat the oven: Set your oven to 375 degrees Fahrenheit to prepare for baking the puff pastry squares.
  2. Prepare the cream cheese mixture: In a bowl, use an electric hand mixer to whip together the cream cheese, lemon zest, lemon juice, egg yolk, vanilla extract, and honey. Whip for approximately 3 minutes until the mixture becomes thick and smooth.
  3. Roll and cut puff pastry: Lay the thawed puff pastry sheet on a well-floured surface and cut it into approximately 3-inch by 3-inch squares. You should be able to get 12 to 16 squares from one sheet.
  4. Score the pastry squares: Arrange the squares on a parchment paper-lined baking sheet, spaced apart. Using a knife, gently score a smaller square inside each larger square without cutting all the way through. Then prick a few holes inside each scored area with a fork to allow steam to escape.
  5. Add filling and blueberries: Spoon a portion of the cream cheese mixture into the center of each square, then top with about 5 fresh blueberries per square.
  6. Apply egg wash: In a small bowl, whisk together the egg and water. Use a brush to apply this egg wash around the edges of each pastry square to help them brown beautifully.
  7. Bake the squares: Place the baking sheet in the oven and bake for 16 to 18 minutes, or until the puff pastry is puffed and golden brown.
  8. Cool and dust with icing sugar: Remove the baked pastries from the oven and let them cool slightly. Then, using a small mesh sieve, dust the tops with icing sugar for a delicate finish.

Notes

  • Ensure the puff pastry is fully thawed before working with it to prevent cracking.
  • Handle the puff pastry gently when scoring to avoid cutting through completely.
  • Blueberries can be substituted with other berries like raspberries or blackberries based on preference.
  • Serve these squares warm or at room temperature for the best taste and texture.
  • If desired, replace honey with maple syrup for a different sweetener option.
