Ingredients

French Toast Base

  • Cooking spray (for greasing the baking dish)
  • 10 oz Challah bread, sliced 1 inch thick (Brioche can be used as an alternative)
  • 7 large eggs
  • 1 ½ cups fat-free milk (such as Fairlife or milk of choice)
  • 1 ½ teaspoons vanilla extract
  • ½ teaspoon ground cinnamon
  • ¼ cup sugar or monk fruit sweetener
  • ¼ teaspoon salt
  • 1 teaspoon Meyers rum or rum extract (optional)

Bananas Foster Sauce

  • 1 tablespoon whipped butter
  • ½ cup packed brown sugar or sugar-free brown sugar (e.g. Wholesome Yum)
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1 tablespoon Meyers rum or 1 teaspoon rum extract (optional)
  • 4 medium ripe bananas, sliced

Instructions

  1. Prepare the Baking Dish: Spray a 13 x 9-inch baking dish with cooking spray to prevent sticking.
  2. Arrange the Bread: Place the sliced bread in a single layer in the baking dish, slightly squeezing the slices to fit snugly.
  3. Make the Custard Mixture: In a large bowl, whisk together eggs, milk, vanilla extract, ½ teaspoon cinnamon, sugar or monk fruit sweetener, salt, and rum or rum extract if using, until well combined.
  4. Soak the Bread: Pour the custard mixture evenly over the arranged bread slices. Cover the dish and refrigerate for at least 8 hours or overnight to allow the bread to absorb the mixture thoroughly.
  5. Preheat the Oven: Remove the dish from the refrigerator and let it come to room temperature. Preheat the oven to 350°F (175°C).
  6. Bake the French Toast: Bake the casserole uncovered in the middle rack of the oven until puffed and the edges turn pale golden, approximately 40 to 45 minutes.
  7. Prepare the Bananas Foster Sauce: While the French toast bakes, melt butter in a large deep skillet over low heat. Add brown sugar, cinnamon, vanilla extract, and rum or rum extract if using. Stir until the sugar dissolves.
  8. Simmer the Sauce: Add a few drops of water if needed to adjust consistency. Let the sauce simmer gently for about 2 minutes to thicken.
  9. Add Bananas to Sauce: Stir in the sliced bananas and simmer for an additional 1 minute. Remove from heat and keep covered to stay warm.
  10. Serve: When the French toast comes out of the oven, divide it among 8 plates and generously top with the warm bananas foster sauce. Enjoy immediately!

Notes

  • For best flavor and texture, soak the bread overnight.
  • Brioche bread is a great substitute if Challah is unavailable.
  • Adjust sweetness with sugar or monk fruit sweetener according to preference.
  • The rum is optional but adds authentic flavor; rum extract works well for a non-alcohol version.
  • Keep the bananas foster sauce covered and warm until ready to serve.
