Ingredients

For the Strawberry Filling:

  • 2 cups fresh strawberries, washed and hulled
  • 1/3 cup granulated sugar
  • 1 tablespoon cornstarch
  • 1 teaspoon lemon juice
  • 1 teaspoon vanilla extract

For the Oatmeal Base and Crumb Topping:

  • 1 cup rolled oats
  • 3/4 cup all purpose flour
  • 1/2 cup butter, softened
  • 1/8 teaspoon salt
  • 1/8 teaspoon baking soda
  • 1/2 cup brown sugar

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C) to prepare for baking the bars.
  2. Prepare Strawberry Filling: Place whole strawberries in a medium saucepan and mash with a potato masher or fork to break them down into smaller chunks and release juices. Stir in granulated sugar and lemon juice, then blend in the cornstarch until no lumps remain.
  3. Cook the Filling: Bring the strawberry mixture to a boil over medium-high heat and then reduce to a simmer. Stir frequently for several minutes until the mixture thickens and the cornstarch becomes clear. Remove from heat, stir in vanilla extract, and allow to cool for 10 minutes.
  4. Make Oatmeal Crumb Mixture: While the filling cools, combine rolled oats, all-purpose flour, softened butter, salt, baking soda, and brown sugar in a mixing bowl. Mix well until a wet crumb forms and all ingredients are incorporated evenly.
  5. Assemble Bars: Line an 8 by 8-inch baking dish with parchment paper. Press all but 2/3 cup of the oatmeal mixture firmly into the bottom of the dish, ensuring the base is even and without cracks. Spread the cooled strawberry filling evenly over the oatmeal base layer.
  6. Add Crumb Topping: Sprinkle the remaining 2/3 cup of the oatmeal crumb mixture evenly over the strawberry layer to form the crumb topping.
  7. Bake: Place the assembled bars in the preheated oven and bake for 30-40 minutes until the topping is golden brown and the strawberry filling is bubbling around the edges.
  8. Cool and Serve: Remove the bars from the oven and allow them to cool completely before slicing and serving to enjoy the perfect texture and flavors.

Notes

  • If using frozen-thawed strawberries, drain excess liquid before cooking and consider adding a cornstarch slurry to thicken the filling if needed.
  • To make a larger batch, double the recipe to fit into a 9 by 13 inch baking dish.
  • Parchment lining helps with easy removal and prevents sticking.
  • Ensure the crumb base is pressed tightly to avoid cracks which can cause filling leakage during baking.
