Ingredients

Potatoes

  • 8 small potatoes (peeled)

Butter Mixture

  • 3 Tbsp salted butter (or unsalted + an extra pinch of salt)
  • 1 tsp garlic powder (or garlic salt, then skip the salt listed below)
  • ¼ tsp salt
  • ¼ tsp ground black pepper

Topping

  • 1 Tbsp canned shredded parmesan (or regular shredded parmesan)

Instructions

  1. Preheat Air Fryer: Preheat your air fryer to 400℉ (200℃) by running it empty for 5 minutes to ensure even cooking temperature.
  2. Slice Potatoes: Place a potato on a wooden spoon and carefully slice thin cuts about every ⅛ inch (3 mm) along the potato, without cutting all the way through. The wooden spoon helps prevent slicing the potato completely.
  3. Prepare Butter Mixture: Melt the butter and stir in garlic powder, salt, and black pepper to create a flavorful coating for the potatoes.
  4. Coat Potatoes: Pour the butter mixture over the sliced potatoes and gently mix or brush it to evenly coat each potato. Save some of the butter mixture for later use.
  5. Initial Air Fry: Arrange the coated potatoes in the air fryer basket and cook at 400℉ (200℃) for 15 minutes, until they are nearly or fully cooked through.
  6. Final Coating and Parmesan: Brush the potatoes with the remaining butter mixture, sprinkle shredded parmesan over them, and air fry for an additional 4-5 minutes at 400℉ (200℃). Monitor closely to prevent burning, removing the basket to check frequently.

Notes

  • Use a wooden spoon or chopsticks when slicing to avoid cutting through the bottom of the potatoes.
  • Adjust garlic powder and salt to taste, especially if using garlic salt.
  • Keep an eye during the final air fry step to prevent the parmesan from burning.
  • Smaller potatoes work best for even air frying and slicing.
  • This recipe yields 2 servings as a side dish.
