Ingredients

Filling

  • 1 cup shredded chicken
  • ¼ cup green salsa or salsa verde (e.g., Trader Joe’s Hatch Valley Salsa)
  • ½ teaspoon chili powder
  • ¼ teaspoon ground cumin
  • ¼ teaspoon paprika
  • 1 cup shredded sharp white cheddar cheese or Mexican blend
  • ½ cup refried beans

Wraps

  • 10 corn tortillas (regular taco size, not street taco size)

For Cooking

  • Oil for brushing or spraying (olive, safflower, sunflower, canola, avocado, corn, etc.)

Instructions

  1. Heat Tortillas: Wrap the tortillas in foil and place them in the air fryer. Heat at 400ºF for about 5 minutes to make them pliable and prevent breaking when rolling.
  2. Prepare Filling: In a medium bowl, combine shredded chicken, salsa, chili powder, cumin, paprika, and cheese. Mix thoroughly to incorporate all ingredients evenly.
  3. Assemble Taquitos: Remove tortillas from the air fryer and, if desired, place parchment paper in the air fryer basket. Spread about 1 tablespoon of refried beans onto each tortilla, then add a heaping tablespoon of the chicken mixture in a line down the center. Roll up the tortilla around the filling and secure with a toothpick if necessary, placing seam side down in the basket.
  4. Apply Oil: Mist or brush each taquito evenly with your choice of oil to promote crispness during cooking.
  5. Cook First Side: Cook the taquitos in the air fryer at 400ºF for approximately 7 minutes until the tops turn light golden brown.
  6. Flip and Finish Cooking: Turn the taquitos over, brush or mist with additional oil, and cook for another 4 to 5 minutes until golden brown and crispy all over.
  7. Serve: Remove from the air fryer and serve immediately with your preferred toppings or dips.

Notes

  • Heating the tortillas before filling makes them pliable and less likely to break when rolling.
  • Use regular taco-sized corn tortillas, not smaller street taco sizes.
  • Use pre-cooked chicken such as leftover roast chicken, rotisserie chicken, or poached and shredded chicken breast or thighs for convenience.
